Serves 4 or more depending on amount of potatoes.  (Fewer makes for a more moreish dish).

Ingredients Colman's English Mustard

Up to 1kg (2lb) potatoes (peeled is nicer)

1 level tsp made Colman’s English Mustard

415g (16oz) can baked beans

110g (4oz) bacon (chopped)

225g (8oz) grated cheddar cheese

Instructions

  • Heat oven to 200ºC (400ºF or Gas Mark 6)
  • Boil potatoes, drain and slice and place layer of potatoes in a large greased ovenproof casserole
  • Stir mustard into baked beans and spread a layer over potatoes
  • Place a layer of bacon on top of beans
  • Place a layer of cheese on top of bacon
  • Either do several layers as described, always ending with cheese on top, or just do one layer each. Place without lid in a hot oven for about 35 minutes.
