Ingredients
115g (4oz) plain flour
Pinch of salt
300ml milk and water (equal quantities)
2 tablespoons Colman’s Mustard Powder
1 egg
16 cocktail sausages
1 medium onion, cut into 8 wedges
1 medium red pepper, deseeded and cut into 8 strips
8 teaspoons oil
Instructions
- Whisk together the flour, salt, milk mixture, mustard and egg to make a smooth batter.
- Into 8 individual Yorkshire pudding tins, put 2 sausages, an onion wedge and a pepper strip. Drizzle 1 teaspoon oil in each tin. Cook at 220°C, 425°F, Gas No 7 for about 8 minutes.
- Pour the batter over the sausages and vegetables. Cook for about 15 minutes until the batter is crisp and golden brown. Serve immediately.
