Vegetable Stir Fry

Ingredients

 


2 tablespoons oil
2 leeks, sliced
115g (4oz) baby sweetcorn
1 red pepper, deseeded and sliced
115g (4oz) mangetout
50g (2oz) cashew nuts
1 teaspoons Colman’s English Mustard
1 teaspoon honey
1 tablespoon lemon juice

 

Instructions

 

  • Heat oil in a large wok or frying pan. Add the leeks and sweetcorn and stir fry for 5 minutes.
  • Add the pepper and mangetout and fry for a further 3 minutes. Mix in the cashew nuts.
  • Stir in the mustard, honey and lemon juice and heat through. Serve immediately.
